A Slice of Heaven

I came home from work yesterday to a little slice of heaven. As I walked into the house, Margo was rolling out pie crust. There was this warm, savory smell. I saw the mirepoix on the cutting board. (That's the fancy-pants french term for onions, carrots, and celery, dontcha know...) What marvelous occassion were we celebrating? I don't know, but I was profoundly grateful.
You see, my favorite food in the world is chicken pot pie. And not just any chicken pot pie, mind you; I love Margo's chicken pot pie. Her crust is flaky. The gravy is not too thick, not too runny. There are big chunks of mushrooms. She even adds peas and lima beans (veggies that I love!) even though she doesn't like them herself. Now that's love! Chicken pot pie is the perfect warm, crusty, savory comfort food. But because it's a lot of work to prepare, it's a rare treat in our household usually reserved for special occasions.
But there it was last night at the dinner table. Becky wasn't very hungry, so I helped myself to her serving. In fact, now that I think about it, there are leftovers in the fridge... and I haven't had breakfast yet... excuse me while I go find a fork...

I can back up your statement...I too have had Margo's chicken pot pie...and it is the BEST!
Chad and I listened to your last weeks sermon on Friday. We were into it about 20 minutes and I looked at Chad and said, "I forgot how much his sermons make me want to read the Bible" Chad agreed and we continued to listen to be totally surprised to have been mentioned in your sermon! I am sooo glad that you were able to bless others with the "Life in Holland" letter. Thanks for mentioning us and sharing Dane's story, we love you!
This isn't the first time that I've heard about this famous chicken pot pie. Would Margo consider sharing the recipe? ; } I have so much time to make homemade pie crust, you know.
